Ingredients:

  • 3 tablespoons (45ml) Whole milk
  • 1 teaspoon (5ml) Pure vanilla extract
  • 1 tablespoon (15ml) Light corn syrup

Instructions:

  1. Sift the powdered sugar into a medium mixing bowl to ensure a smooth, lump-free texture and prevent clogging piping tips.
  2. Add the milk, vanilla extract, and light corn syrup to the sifted sugar.
  3. Whisk the mixture slowly at first, then increase speed and whisk vigorously until the sugar is fully incorporated and the icing is glossy.
  4. Test the consistency by lifting the whisk; the icing should drizzle in a 'ribbon' and disappear in about 10 seconds. Adjust with more sugar or milk if necessary.
  5. Divide the icing into bowls, stir in gel food coloring as desired, and use immediately or transfer to piping bags.
