Ingredients:

  • 1 pound (450g) ground beef (or ground turkey/chicken)
  • 1 tablespoon (15ml) olive oil
  • 1 packet (1 ounce/28g) taco seasoning
  • ½ cup (120ml) water
  • 4 large (10-12 inch) flour tortillas
  • 1 (16 ounce/450g) can refried beans
  • 2 cups (225g) shredded cheddar cheese (or a Mexican cheese blend)
  • ½ cup (120ml) salsa (mild, medium, or hot, your choice!)
  • ½ cup (75g) diced tomatoes
  • ¼ cup (25g) sliced green onions
  • ¼ cup (25g) sliced black olives
  • ½ cup (75g) shredded lettuce
  • Sour cream or guacamole, for serving

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up with a spatula, until browned. Drain off any excess grease.
  2. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid has reduced.
  3. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Place 2 tortillas on the prepared baking sheet. Spread each tortilla with refried beans. Top with the seasoned ground beef mixture. Sprinkle with cheese. Top with the remaining tortillas. Spread with salsa and more cheese.
  5. Bake for 10-12 minutes, or until the cheese is melted and bubbly and the tortillas are lightly golden brown.
  6. Remove from oven and top with your favorite toppings (tomatoes, green onions, black olives, lettuce, etc.).
  7. Cut each pizza into wedges and serve immediately with sour cream or guacamole, if desired.
