Ingredients:

  • 1.5 cups (120g) old-fashioned rolled oats
  • 0.5 cup (45g) vanilla or chocolate protein powder
  • 0.5 tsp (3g) sea salt
  • 1 tbsp (10g) chia seeds or ground flaxseed
  • 0.5 cup (125g) natural creamy peanut butter
  • 0.33 cup (115g) raw honey or pure maple syrup
  • 1 tsp (5ml) pure vanilla extract
  • 0.33 cup (55g) mini dark chocolate chips
  • 1 tbsp (15ml) water or almond milk

Instructions:

  1. In a large mixing bowl, combine the runny peanut butter, honey, and vanilla extract. Stir with a spatula until the mixture forms a uniform, glossy paste.
  2. Add the protein powder and sea salt to the wet mixture, stirring until a thick frosting-like consistency is achieved.
  3. Fold in the rolled oats and chia seeds. Allow the mixture to rest for 5 minutes to let the oats hydrate and the fiber bind the dough.
  4. Gently fold in the mini dark chocolate chips. If the mixture is too crumbly, add water or almond milk one tablespoon at a time until a pliable dough forms.
  5. Using a small cookie scoop or tablespoon, portion the dough and roll into 12 to 14 even balls. Store in an airtight container in the refrigerator.
