Ingredients:
- 1.5 cups (120g) old-fashioned rolled oats
- 0.5 cup (45g) vanilla or chocolate protein powder
- 0.5 tsp (3g) sea salt
- 1 tbsp (10g) chia seeds or ground flaxseed
- 0.5 cup (125g) natural creamy peanut butter
- 0.33 cup (115g) raw honey or pure maple syrup
- 1 tsp (5ml) pure vanilla extract
- 0.33 cup (55g) mini dark chocolate chips
- 1 tbsp (15ml) water or almond milk
Instructions:
- In a large mixing bowl, combine the runny peanut butter, honey, and vanilla extract. Stir with a spatula until the mixture forms a uniform, glossy paste.
- Add the protein powder and sea salt to the wet mixture, stirring until a thick frosting-like consistency is achieved.
- Fold in the rolled oats and chia seeds. Allow the mixture to rest for 5 minutes to let the oats hydrate and the fiber bind the dough.
- Gently fold in the mini dark chocolate chips. If the mixture is too crumbly, add water or almond milk one tablespoon at a time until a pliable dough forms.
- Using a small cookie scoop or tablespoon, portion the dough and roll into 12 to 14 even balls. Store in an airtight container in the refrigerator.
