Ingredients:

  • 4 cups (680g) fresh peaches, peeled and sliced
  • 1.5 cups (300g) granulated sugar, divided
  • 1 tsp lemon juice
  • 0.5 cup (113g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 2 tsp baking powder
  • 0.25 tsp fine sea salt
  • 1 cup (240ml) whole milk
  • 1 tsp vanilla extract
  • 0.25 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (180°C). Place the stick of butter in a 9x13 inch baking dish and place it in the oven to melt while the oven preheats.
  2. In a medium bowl, toss the sliced peaches with 1/2 cup (100g) of sugar and the lemon juice. Set aside to macerate and release juices.
  3. In a separate mixing bowl, whisk together the flour, the remaining 1 cup (200g) of sugar, baking powder, and salt.
  4. Whisk in the whole milk, vanilla extract, and ground cinnamon until the batter is just combined and smooth.
  5. Carefully remove the hot baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
  6. Spoon the peach mixture (including any juices) evenly over the batter. Do not stir.
  7. Bake for 45 minutes, or until the top is a deep mahogany gold and the crust has risen around the bubbling fruit.
