Ingredients:
- 4 cups (680g) fresh peaches, peeled and sliced
- 1.5 cups (300g) granulated sugar, divided
- 1 tsp lemon juice
- 0.5 cup (113g) unsalted butter
- 1 cup (125g) all-purpose flour
- 2 tsp baking powder
- 0.25 tsp fine sea salt
- 1 cup (240ml) whole milk
- 1 tsp vanilla extract
- 0.25 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (180°C). Place the stick of butter in a 9x13 inch baking dish and place it in the oven to melt while the oven preheats.
- In a medium bowl, toss the sliced peaches with 1/2 cup (100g) of sugar and the lemon juice. Set aside to macerate and release juices.
- In a separate mixing bowl, whisk together the flour, the remaining 1 cup (200g) of sugar, baking powder, and salt.
- Whisk in the whole milk, vanilla extract, and ground cinnamon until the batter is just combined and smooth.
- Carefully remove the hot baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
- Spoon the peach mixture (including any juices) evenly over the batter. Do not stir.
- Bake for 45 minutes, or until the top is a deep mahogany gold and the crust has risen around the bubbling fruit.
