Ingredients:
- 3 cups (510 g) Quality White Chocolate Chips, divided
- 1 (14 oz) can (397 g) Sweetened Condensed Milk
- 2 Tbsp (30 g) Unsalted Butter
- 1 tsp (5 mL) Vanilla Extract
- 1/4 tsp (1 g) Fine Sea Salt
- Gel Food Colouring (Pink, Blue, Purple - 3-4 drops each)
- 1/4 cup (30 g) Unicorn Sprinkles/Jimmies
- 1 tsp (5 g) Edible Glitter or Stars
Instructions:
- Line your chosen pan (8x8 or 9x5) with parchment paper, ensuring there is enough overhang on two sides to use as 'handles' later. Lightly spray the base of the pan first to help the paper stick.
- Place the white chocolate chips (reserving about 1/4 cup), sweetened condensed milk, butter, and sea salt into the large microwave-safe bowl.
- Microwave the mixture on 50% power in 30-second intervals. Stir vigorously after each interval. This should take 90 seconds to 2 minutes total until the mixture is thick, smooth, and completely melted.
- Once smooth, stir in the vanilla extract and the reserved 1/4 cup of white chocolate chips (this aids setting and adds texture).
- Quickly divide the warm fudge mixture evenly into three separate, small bowls. Work fast, as the fudge sets as it cools.
- Add 3-4 drops of one gel food colouring (e.g., Pink) to the first bowl and mix until the colour is uniform and vibrant. Repeat with the Blue and Purple colours in the remaining two bowls.
- Spoon large, alternating dollops of the three coloured fudges randomly into the prepared pan.
- Using a knife or a skewer, gently drag it through the colored fudge 2-3 times in different directions to create a marbled swirl effect. Do not over-swirl.
- Immediately sprinkle the unicorn sprinkles and edible glitter evenly over the top of the soft fudge mixture before it sets. Gently press them down with the back of a spatula.
- Place the pan into the refrigerator and chill for a minimum of 2 hours, or until the fudge is firm to the touch and completely set.
- Use the parchment paper overhang to lift the entire block of fudge out of the pan. Heat a large, sharp knife under very hot water, wipe it dry, and use it to cut the fudge into 16 uniform squares. Reheat the knife before each cut for clean edges.
