Ingredients:
- lbs (680g) Carrots, peeled and sliced diagonally (about 1-inch thick pieces)
- Tablespoons (60ml) good quality, runny Honey
- Tablespoons (30g) Unsalted Butter, melted
- Tablespoon (15ml) Olive Oil
- Teaspoon (5ml) Fresh Thyme Leaves
- /2 Teaspoon (2.5g) Salt (Kosher or sea salt)
- /4 Teaspoon (1g) Black Pepper, freshly ground
Instructions:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Peel carrots and slice them into uniform, diagonal pieces (about 1-inch thick). Uniformity ensures even cooking.
- Make the glaze: In a small bowl, whisk together the melted butter, honey, olive oil, salt, pepper, and fresh thyme leaves until well combined.
- Place the prepared carrots in the large mixing bowl. Pour the glaze mixture over the carrots and toss thoroughly until every piece is evenly coated.
- Spread the glazed carrots in a single layer on the prepared baking sheet. Avoid overcrowding the pan.
- Roast for 15 minutes.
- Carefully remove the tray, give the carrots a gentle toss with a spatula to expose all sides to the heat. Return to the oven and roast for another 15–20 minutes until tender and edges are golden brown.
- Transfer immediately to a serving dish and serve piping hot.
