Ingredients:

  • lbs (680g) Carrots, peeled and sliced diagonally (about 1-inch thick pieces)
  • Tablespoons (60ml) good quality, runny Honey
  • Tablespoons (30g) Unsalted Butter, melted
  • Tablespoon (15ml) Olive Oil
  • Teaspoon (5ml) Fresh Thyme Leaves
  • /2 Teaspoon (2.5g) Salt (Kosher or sea salt)
  • /4 Teaspoon (1g) Black Pepper, freshly ground

Instructions:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Peel carrots and slice them into uniform, diagonal pieces (about 1-inch thick). Uniformity ensures even cooking.
  3. Make the glaze: In a small bowl, whisk together the melted butter, honey, olive oil, salt, pepper, and fresh thyme leaves until well combined.
  4. Place the prepared carrots in the large mixing bowl. Pour the glaze mixture over the carrots and toss thoroughly until every piece is evenly coated.
  5. Spread the glazed carrots in a single layer on the prepared baking sheet. Avoid overcrowding the pan.
  6. Roast for 15 minutes.
  7. Carefully remove the tray, give the carrots a gentle toss with a spatula to expose all sides to the heat. Return to the oven and roast for another 15–20 minutes until tender and edges are golden brown.
  8. Transfer immediately to a serving dish and serve piping hot.
