Ingredients:
- 1 cup Water (240 ml)
- 1 cup Granulated Sugar (200 g)
- 1 cup Fresh Cranberries (100 g), plus extra for garnish
- 3 whole Cinnamon Sticks
- 1 teaspoon Whole Cloves
- 1 strip Orange Zest (avoiding pith)
- 6 cups Pure Cranberry Juice (1.4 Litres, unsweetened)
- 4 cups High-Quality Apple Cider (950 ml)
- 4 cups Ginger Ale or Club Soda (950 ml) OR 2 bottles Prosecco or Sparkling Wine (1.5 Litres total)
- Optional Spiked: 1.5 cups Dark Rum or Spiced Whiskey (350 ml)
- Thinly Sliced Oranges and Lemons (for garnish)
- 5-6 Star Anise Pods (for garnish)
Instructions:
- Combine Syrup Ingredients: Place the water, sugar, fresh cranberries, cinnamon sticks, whole cloves, and orange zest strip into a medium saucepan.
- Simmer: Bring the mixture to a rolling boil over medium-high heat, stirring until the sugar is fully dissolved (about 3 minutes).
- Infuse: Reduce the heat to low and let the mixture gently simmer for 5–7 minutes, using the back of a spoon to lightly crush a few of the cranberries to release their juices.
- Strain and Cool: Remove the pan from the heat. Carefully strain the hot syrup through a fine-mesh sieve into a clean container, ensuring no spice solids remain. Discard the solids.
- Crucial Chill: Refrigerate the spiced syrup for at least 2 hours, or ideally overnight, until it is completely cold.
- Make Ice Cubes: Fill ice trays with extra cranberry juice or apple cider (instead of water) and freeze. This prevents dilution of the punch.
- Combine Base Liquids: Pour the cold cranberry juice, apple cider, and the fully chilled spiced syrup into the large punch bowl. Stir gently to combine.
- Add Alcohol (If Spiking): If using, gently stir in the dark rum or whiskey now.
- Add Ice and Garnish: Add the juice/cider ice cubes and the decorative garnishes: sliced citrus (oranges and lemons), fresh cranberries, and star anise.
- Add Fizz Last: Just before serving, slowly pour in the cold ginger ale, club soda, or sparkling wine/Prosecco. Stir once very gently from the bottom up to preserve effervescence.
- Serve Immediately: Ladle into cups garnished with an orange slice or a few fresh cranberries.
