Ingredients:

  • 2 medium ripe bananas (peeled, sliced, and frozen)
  • 1/2 cup (128g) natural, smooth, unsalted peanut butter (must be Xylitol-free)
  • 1/4 cup (60ml) plain, unsweetened yogurt (Greek or regular)

Instructions:

  1. Ensure bananas are peeled, sliced, and thoroughly frozen (at least 6 hours prior).
  2. Combine the frozen banana slices and the peanut butter in a high-powered blender or food processor.
  3. Pulse the mixture repeatedly, stopping frequently to scrape down the sides. Continue until the mixture begins to resemble thick, soft-serve ice cream.
  4. Add the plain yogurt and pulse just until fully incorporated and smooth. Do not over-process once the yogurt is added.
  5. Spoon the soft mixture into your chosen freezer-safe container (like a lined loaf pan or silicone moulds).
  6. Cover and place in the freezer for a minimum of 4 hours until completely firm.
  7. Allow the frozen treat to sit on the counter for 5–10 minutes before scooping or removing from moulds to serve immediately.
