Instructions:

  1. Prepare the aromatics: Peel and finely mince the 4 cloves of garlic. Measure out the remaining ingredients.
  2. Combine Marinade Base: In a medium mixing bowl or a large sealable zip-top bag, combine the soy sauce, olive oil, brown sugar, minced garlic, and freshly cracked black pepper.
  3. Emulsify/Mix: Whisk vigorously until the brown sugar has mostly dissolved into the liquid. If using a bag, seal tightly and massage until well combined.
  4. Marinate the Steak: Place your steaks (e.g., Rump, Sirloin, or Ribeye) into the marinade, ensuring they are fully coated.
  5. Chill: Seal the container or bag and refrigerate. Marinate for a minimum of 30 minutes, ideally for 2 to 4 hours. Do not exceed 8 hours.
  6. Prep for Cooking: Remove the steaks from the fridge 30 minutes before cooking to allow them to come up to room temperature. Discard the used marinade and lightly pat the steaks dry with kitchen paper before cooking.
