Ingredients:

  • 2 cups (300g) Granny Smith apples, peeled and diced into 1/2-inch cubes
  • 2 tbsp (25g) granulated sugar
  • 1 tsp ground cinnamon
  • 1.5 cups (190g) all-purpose flour
  • 1 tsp baking soda
  • 0.25 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup (100g) granulated sugar
  • 0.5 cup (105g) light brown sugar, packed
  • 0.5 cup (120g) unsweetened applesauce
  • 0.33 cup (80ml) neutral vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 0.5 cup (65g) all-purpose flour
  • 0.5 cup (100g) light brown sugar
  • 1 tsp ground cinnamon
  • 0.25 cup (55g) unsalted butter, cold and cubed

Instructions:

  1. Toss the diced Granny Smith apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon in a small bowl. Let macerate for 10 minutes to release excess moisture.
  2. In a medium bowl, combine the streusel ingredients: 0.5 cup flour, 0.5 cup brown sugar, and 1 teaspoon cinnamon. Use a pastry cutter or two forks to cut in the cold, cubed butter until the mixture resembles coarse, pea-sized crumbs. Refrigerate until needed.
  3. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  4. In a large mixing bowl, whisk together 1.5 cups flour, baking soda, baking powder, and salt.
  5. In a separate bowl, whisk together the applesauce, neutral oil, 0.5 cup granulated sugar, 0.5 cup brown sugar, eggs, and vanilla extract until well combined.
  6. Gently fold the dry ingredients into the wet ingredients until just combined. Fold in the macerated apples and any accumulated juices.
  7. Pour the batter into the prepared loaf pan. Evenly distribute the chilled streusel over the top.
  8. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack before slicing.
