Ingredients:
- 2 cups (300g) Granny Smith apples, peeled and diced into 1/2-inch cubes
- 2 tbsp (25g) granulated sugar
- 1 tsp ground cinnamon
- 1.5 cups (190g) all-purpose flour
- 1 tsp baking soda
- 0.25 tsp baking powder
- 0.5 tsp salt
- 0.5 cup (100g) granulated sugar
- 0.5 cup (105g) light brown sugar, packed
- 0.5 cup (120g) unsweetened applesauce
- 0.33 cup (80ml) neutral vegetable oil
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 0.5 cup (65g) all-purpose flour
- 0.5 cup (100g) light brown sugar
- 1 tsp ground cinnamon
- 0.25 cup (55g) unsalted butter, cold and cubed
Instructions:
- Toss the diced Granny Smith apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon in a small bowl. Let macerate for 10 minutes to release excess moisture.
- In a medium bowl, combine the streusel ingredients: 0.5 cup flour, 0.5 cup brown sugar, and 1 teaspoon cinnamon. Use a pastry cutter or two forks to cut in the cold, cubed butter until the mixture resembles coarse, pea-sized crumbs. Refrigerate until needed.
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together 1.5 cups flour, baking soda, baking powder, and salt.
- In a separate bowl, whisk together the applesauce, neutral oil, 0.5 cup granulated sugar, 0.5 cup brown sugar, eggs, and vanilla extract until well combined.
- Gently fold the dry ingredients into the wet ingredients until just combined. Fold in the macerated apples and any accumulated juices.
- Pour the batter into the prepared loaf pan. Evenly distribute the chilled streusel over the top.
- Bake for 55 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack before slicing.
