Ingredients:

  • 1 ¾ cups (220g) all-purpose flour
  • ½ cup (60g) cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon dried savory
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) olive oil
  • ¼ cup (30g) grated Parmesan cheese (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and dried savory.
  3. In a separate bowl, beat together the sugar, eggs, and vanilla until combined.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Stir in the olive oil until the dough comes together; it may be slightly sticky.
  6. Shape the dough into a log about 12 inches long on the prepared baking sheet.
  7. Optionally, sprinkle the top with Parmesan cheese.
  8. Bake for 30 minutes, or until golden brown.
  9. Remove from the oven and let cool for 10 minutes before slicing into ½-inch thick pieces.
  10. Place the slices cut-side down on the baking sheet and return to the oven for another 10-15 minutes, until crispy.
