Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- ½ cup (60g) cornmeal
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon dried savory
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) olive oil
- ¼ cup (30g) grated Parmesan cheese (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and dried savory.
- In a separate bowl, beat together the sugar, eggs, and vanilla until combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Stir in the olive oil until the dough comes together; it may be slightly sticky.
- Shape the dough into a log about 12 inches long on the prepared baking sheet.
- Optionally, sprinkle the top with Parmesan cheese.
- Bake for 30 minutes, or until golden brown.
- Remove from the oven and let cool for 10 minutes before slicing into ½-inch thick pieces.
- Place the slices cut-side down on the baking sheet and return to the oven for another 10-15 minutes, until crispy.
