Ingredients:

  • 1 pound ground beef (80/20 for flavor)
  • 1 tablespoon olive oil (if necessary)
  • 1 small onion, diced
  • 1 packet taco seasoning (1 oz / 28g)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 ounces Doritos, crushed
  • 1 cup sour cream
  • 1 medium green bell pepper, chopped (optional)
  • Fresh cilantro, chopped (optional)
  • Additional cheese for topping

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil (if needed), and sauté the diced onion until translucent.
  3. Add ground beef and cook until browned, breaking it up with a spoon. Season with taco seasoning.
  4. Stir in salsa and mix well. Remove from heat.
  5. In a separate bowl, mix together sour cream and half of the shredded cheese.
  6. In the baking dish, create a layer of crushed Doritos.
  7. Spread half of the beef mixture over the Doritos.
  8. Spoon half of the sour cream mixture over the beef, then repeat the layers.
  9. Finish with a final layer of crushed Doritos, and sprinkle remaining cheese on top. Cover with aluminum foil.
  10. Bake in the preheated oven for 20 minutes, then remove foil and bake an additional 5-10 minutes until cheese is bubbly and golden.
  11. Allow to cool for a few minutes; garnish with cilantro, if desired. Serve hot.
