Ingredients:

  • 4 large vine-ripened tomatoes (about 1 pound or 450g)
  • 8 ounces (225g) fresh mozzarella cheese
  • 1 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (optional)
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions:

  1. Rinse and dry the tomatoes and basil leaves. Slice the tomatoes into 1/4-inch thick rounds. Slice the fresh mozzarella into 1/4-inch thick rounds.
  2. On a serving platter, alternate layers of tomato slices and mozzarella slices. Tuck whole basil leaves between the layers for a vibrant look.
  3. Drizzle extra virgin olive oil evenly over the assembled salad. Add balsamic glaze if using.
  4. Sprinkle sea salt and freshly cracked black pepper over the top for added flavor.
