Ingredients:
- 4 large vine-ripened tomatoes (about 1 pound or 450g)
- 8 ounces (225g) fresh mozzarella cheese
- 1 cup fresh basil leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze (optional)
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions:
- Rinse and dry the tomatoes and basil leaves. Slice the tomatoes into 1/4-inch thick rounds. Slice the fresh mozzarella into 1/4-inch thick rounds.
- On a serving platter, alternate layers of tomato slices and mozzarella slices. Tuck whole basil leaves between the layers for a vibrant look.
- Drizzle extra virgin olive oil evenly over the assembled salad. Add balsamic glaze if using.
- Sprinkle sea salt and freshly cracked black pepper over the top for added flavor.
