Ingredients:

  • 3 ripe bananas (about 1 ½ cups mashed or 450 g)
  • ½ cup honey or maple syrup (120 mL)
  • ¼ cup unsweetened applesauce (60 mL)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract (5 mL)
  • 1 ½ cups gluten-free all-purpose flour blend (180 g)
  • 1 teaspoon baking soda (5 g)
  • ½ teaspoon baking powder (3 g)
  • ½ teaspoon salt (3 g)
  • 1 teaspoon ground cinnamon (optional, 2 g)
  • ½ cup chopped nuts or chocolate chips (optional, 80 g)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. In a mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.
  4. Add honey (or maple syrup), applesauce, eggs, and vanilla extract; whisk until well combined.
  5. In a separate bowl, combine gluten-free flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, folding gently until just combined (do not overmix).
  7. If desired, fold in nuts or chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
