- 3 ripe bananas (about 1 ½ cups mashed or 450 g)
- ½ cup honey or maple syrup (120 mL)
- ¼ cup unsweetened applesauce (60 mL)
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract (5 mL)
- 1 ½ cups gluten-free all-purpose flour blend (180 g)
- 1 teaspoon baking soda (5 g)
- ½ teaspoon baking powder (3 g)
- ½ teaspoon salt (3 g)
- 1 teaspoon ground cinnamon (optional, 2 g)
- ½ cup chopped nuts or chocolate chips (optional, 80 g)
Instructions:
- Preheat oven to 350°F (175°C).
- Prepare the loaf pan by greasing it or lining it with parchment paper.
- In a mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.
- Add honey (or maple syrup), applesauce, eggs, and vanilla extract; whisk until well combined.
- In a separate bowl, combine gluten-free flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined (do not overmix).
- If desired, fold in nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
