Ingredients:

  • 3 medium ripe tomatoes, diced (approximately 400g)
  • 1 cup (150g) red bell pepper, chopped
  • 1 tablespoon (12g) garlic, minced
  • 2 tablespoons (30ml) fresh lime juice
  • 1 tablespoon (15ml) honey or agave syrup
  • 1-3 teaspoons (5-15ml) sriracha sauce
  • 1 teaspoon (5g) ground cumin
  • Salt and pepper to taste
  • 2 tablespoons (30ml) olive oil
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions:

  1. Chop tomatoes and red bell pepper. Mince the garlic.
  2. In a medium saucepan, heat olive oil over medium heat. Add diced tomatoes, chopped bell pepper, and minced garlic; sauté until soft (about 5-7 minutes).
  3. Transfer the sautéed vegetables to a blender or food processor. Add lime juice, honey, sriracha, cumin, salt, and pepper.
  4. Blend until you achieve a smooth consistency, adjusting sweetness or heat to taste.
  5. Pour the blended sauce back into the saucepan and simmer on low for 10-15 minutes to meld flavors.
  6. Taste the sauce and adjust seasoning as necessary; if desired, add more sriracha for heat.
  7. Drizzle over tacos or grilled meats, and garnish with cilantro and lime wedges.
