Ingredients:
- 3 medium ripe tomatoes, diced (approximately 400g)
- 1 cup (150g) red bell pepper, chopped
- 1 tablespoon (12g) garlic, minced
- 2 tablespoons (30ml) fresh lime juice
- 1 tablespoon (15ml) honey or agave syrup
- 1-3 teaspoons (5-15ml) sriracha sauce
- 1 teaspoon (5g) ground cumin
- Salt and pepper to taste
- 2 tablespoons (30ml) olive oil
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
Instructions:
- Chop tomatoes and red bell pepper. Mince the garlic.
- In a medium saucepan, heat olive oil over medium heat. Add diced tomatoes, chopped bell pepper, and minced garlic; sauté until soft (about 5-7 minutes).
- Transfer the sautéed vegetables to a blender or food processor. Add lime juice, honey, sriracha, cumin, salt, and pepper.
- Blend until you achieve a smooth consistency, adjusting sweetness or heat to taste.
- Pour the blended sauce back into the saucepan and simmer on low for 10-15 minutes to meld flavors.
- Taste the sauce and adjust seasoning as necessary; if desired, add more sriracha for heat.
- Drizzle over tacos or grilled meats, and garnish with cilantro and lime wedges.
