Ingredients:

  • 2 cups (180g) Old Fashioned Rolled Oats
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.5 tsp fine sea salt
  • 2 cups (480ml) whole milk
  • 2 large eggs
  • 1/3 cup (80ml) pure maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp pure vanilla extract
  • 1.5 cups fresh blueberries
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (180°C). Generously grease a 9x9 inch square baking dish with coconut oil or butter to ensure a crispy perimeter.
  2. In a large mixing bowl, whisk together the eggs, milk, maple syrup, melted coconut oil, and vanilla extract until completely homogenous and slightly frothy.
  3. In a separate bowl or directly in the baking dish, combine the rolled oats, baking powder, cinnamon, and sea salt.
  4. Layer half of the berries into the bottom of the dish, cover with the oat mixture, and then top with the remaining berries and chopped walnuts.
  5. Pour the liquid custard emulsion over the oats, ensuring all oats are submerged. Bake for 40 minutes until the top is golden-brown and the center is set but remains tender.
