Ingredients:
- 2 cups (180g) Old Fashioned Rolled Oats
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- 0.5 tsp fine sea salt
- 2 cups (480ml) whole milk
- 2 large eggs
- 1/3 cup (80ml) pure maple syrup
- 2 tbsp melted coconut oil
- 1 tsp pure vanilla extract
- 1.5 cups fresh blueberries
- 1/2 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (180°C). Generously grease a 9x9 inch square baking dish with coconut oil or butter to ensure a crispy perimeter.
- In a large mixing bowl, whisk together the eggs, milk, maple syrup, melted coconut oil, and vanilla extract until completely homogenous and slightly frothy.
- In a separate bowl or directly in the baking dish, combine the rolled oats, baking powder, cinnamon, and sea salt.
- Layer half of the berries into the bottom of the dish, cover with the oat mixture, and then top with the remaining berries and chopped walnuts.
- Pour the liquid custard emulsion over the oats, ensuring all oats are submerged. Bake for 40 minutes until the top is golden-brown and the center is set but remains tender.
