  • 1 cup warm water (240 ml)
  • 1/2 teaspoon salt (3 g)
  • 1 cup cooked shredded chicken (150 g) or beef
  • 1 cup refried beans (240 g)
  • 1 teaspoon chili powder (2 g)
  • 1/2 teaspoon cumin (1 g)
  • Salt and pepper to taste
  • 1 cup shredded lettuce (50 g)
  • 1/2 cup diced tomatoes (75 g)
  • 1/2 cup shredded cheese (such as cheddar or queso fresco) (60 g)
  • Sour cream or Mexican crema, for drizzling
  • Vegetable oil for frying (approximately 2 cups or 480 ml)

Instructions:

  1. Combine masa harina, salt, and warm water in a bowl.
  2. Knead until smooth, cover, and let it sit for 30 minutes.
  3. Divide the dough into equal portions (about 8 pieces).
  4. Roll each portion into a ball, then flatten using a rolling pin.
  5. Heat oil in a skillet over medium-high heat.
  6. Fry each tortilla until golden and crisp, about 2-3 minutes per side.
  7. Drain on paper towels.
  8. In a skillet, mix chicken or beef with refried beans, chili powder, cumin, salt, and pepper.
  9. Heat until warmed through.
  10. Layer the filling onto each crispy tortilla.
  11. Top with shredded lettuce, diced tomatoes, cheese, and sour cream.
