Ingredients:
- 2 large sweet potatoes (about 2 pounds/900g), peeled and cut into ½-inch thick fries
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon cornstarch (15 ml)
- 1 teaspoon smoked paprika (5 ml)
- ½ teaspoon garlic powder (2.5 ml)
- ½ teaspoon onion powder (2.5 ml)
- ¼ teaspoon cayenne pepper (1 ml) (optional, for a little kick)
- Salt and freshly ground black pepper, to taste
- Fresh rosemary sprigs, for garnish (optional)
Instructions:
- Wash, peel, and cut the sweet potatoes into even-sized fries. Aim for consistency for even cooking.
- Soak the cut fries in cold water for at least 30 minutes. This helps remove excess starch for crispier results. Drain thoroughly and pat completely dry.
- In a large bowl, toss the dried sweet potato fries with olive oil, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Make sure everything is evenly coated.
- Spread the seasoned sweet potato fries in a single layer on a baking sheet lined with parchment paper. Make sure they aren't overcrowded; use two baking sheets if necessary.
- Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and serve immediately. Garnish with fresh rosemary, if desired.
