Ingredients:

  • 1 medium head cauliflower (approx. 600g / 21 oz), cut into florets
  • 1 large egg, lightly beaten
  • 100g / 3.5 oz grated mozzarella cheese, divided
  • 50g / 1.75 oz grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Black pepper to taste
  • 1/2 cup / 120 ml pizza sauce or tomato passata
  • 100g / 3.5 oz mozzarella cheese, sliced or grated
  • 50g / 1.75 oz pepperoni slices (or your preferred toppings)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Steam or boil cauliflower florets until very tender. Drain well.
  2. Process the cooked cauliflower in a food processor until it resembles rice. Alternatively, grate using a box grater.
  3. Place the cauliflower 'rice' in a cheesecloth or clean kitchen towel. Squeeze out as much moisture as possible.
  4. In a large bowl, combine the squeezed cauliflower with egg, 100g mozzarella, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well.
  5. Line a baking sheet with parchment paper. Press the cauliflower mixture onto the parchment paper, forming a pizza crust about 12 inches (30 cm) in diameter.
  6. Bake in a preheated oven at 200°C / 400°F / Gas Mark 6 for 15-20 minutes, or until the crust is lightly golden and firm.
  7. Remove the crust from the oven. Spread the pizza sauce evenly over the crust. Top with the remaining 100g mozzarella cheese and your desired toppings.
  8. Return the pizza to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the toppings are heated through.
  9. Garnish with fresh basil leaves, if desired. Slice and serve immediately. This is a great cauliflower crust pizza recipe.
