Ingredients:
- 1 medium head cauliflower (approx. 600g / 21 oz), cut into florets
- 1 large egg, lightly beaten
- 100g / 3.5 oz grated mozzarella cheese, divided
- 50g / 1.75 oz grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- Black pepper to taste
- 1/2 cup / 120 ml pizza sauce or tomato passata
- 100g / 3.5 oz mozzarella cheese, sliced or grated
- 50g / 1.75 oz pepperoni slices (or your preferred toppings)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Steam or boil cauliflower florets until very tender. Drain well.
- Process the cooked cauliflower in a food processor until it resembles rice. Alternatively, grate using a box grater.
- Place the cauliflower 'rice' in a cheesecloth or clean kitchen towel. Squeeze out as much moisture as possible.
- In a large bowl, combine the squeezed cauliflower with egg, 100g mozzarella, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix well.
- Line a baking sheet with parchment paper. Press the cauliflower mixture onto the parchment paper, forming a pizza crust about 12 inches (30 cm) in diameter.
- Bake in a preheated oven at 200°C / 400°F / Gas Mark 6 for 15-20 minutes, or until the crust is lightly golden and firm.
- Remove the crust from the oven. Spread the pizza sauce evenly over the crust. Top with the remaining 100g mozzarella cheese and your desired toppings.
- Return the pizza to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the toppings are heated through.
- Garnish with fresh basil leaves, if desired. Slice and serve immediately. This is a great cauliflower crust pizza recipe.
