Ingredients:
- 1 pound (450g) white fish fillets (cod, haddock, or tilapia), fresh or frozen (thawed)
- 1 tablespoon (15ml) olive oil
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) black pepper
- 1/2 cup (60g) panko breadcrumbs
- 1/4 cup (30g) grated Parmesan cheese (optional)
- 1 teaspoon (5ml) dried parsley
- 1/2 teaspoon (2.5ml) garlic powder
- Lemon wedges, for serving
Instructions:
- Pat the fish fillets dry with paper towels.
- Lightly brush both sides of the fish with olive oil. Sprinkle with salt and pepper.
- In a small bowl, combine panko breadcrumbs, Parmesan cheese (if using), dried parsley, and garlic powder. Mix well.
- Dredge each fish fillet in the breadcrumb mixture, pressing gently to adhere.
- Preheat your air fryer to 400°F (200°C).
- Place the breaded fish fillets in the air fryer basket in a single layer. Cook in batches if necessary.
- Air fry for 10-15 minutes, or until the fish is cooked through and the breadcrumbs are golden brown and crispy. The fish should flake easily with a fork.
- Serve hot with lemon wedges and your favourite sides. Enjoy your fish in the air fryer!
