Ingredients:

  • 1 pound (450g) white fish fillets (cod, haddock, or tilapia), fresh or frozen (thawed)
  • 1 tablespoon (15ml) olive oil
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 1/2 cup (60g) panko breadcrumbs
  • 1/4 cup (30g) grated Parmesan cheese (optional)
  • 1 teaspoon (5ml) dried parsley
  • 1/2 teaspoon (2.5ml) garlic powder
  • Lemon wedges, for serving

Instructions:

  1. Pat the fish fillets dry with paper towels.
  2. Lightly brush both sides of the fish with olive oil. Sprinkle with salt and pepper.
  3. In a small bowl, combine panko breadcrumbs, Parmesan cheese (if using), dried parsley, and garlic powder. Mix well.
  4. Dredge each fish fillet in the breadcrumb mixture, pressing gently to adhere.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the breaded fish fillets in the air fryer basket in a single layer. Cook in batches if necessary.
  7. Air fry for 10-15 minutes, or until the fish is cooked through and the breadcrumbs are golden brown and crispy. The fish should flake easily with a fork.
  8. Serve hot with lemon wedges and your favourite sides. Enjoy your fish in the air fryer!
