Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1 cup (120 g) all-purpose flour
  • 2 large eggs
  • 1 cup (100 g) seasoned breadcrumbs (or panko for extra crunch)
  • ½ cup (50 g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup (240 ml) marinara sauce
  • 1 ½ cups (150 g) shredded mozzarella cheese (for topping)
  • Fresh basil leaves (optional for garnish)

Instructions:

  1. Flatten chicken breasts to an even thickness (about ½ inch) and season with salt and pepper.
  2. In bowl 1, place the flour. In bowl 2, beat the eggs. In bowl 3, combine breadcrumbs, grated Parmesan, garlic powder, and dried basil.
  3. Dredge each chicken breast in flour, dip into the beaten eggs, and coat in breadcrumb mixture, pressing firmly to adhere.
  4. Place breaded chicken on a baking tray and refrigerate for 30 minutes.
  5. Preheat air fryer to 400°F (200°C) for about 5 minutes.
  6. Spray each chicken breast lightly with cooking spray. Arrange chicken in a single layer in the air fryer basket. Cook for 10 minutes.
  7. Flip chicken breasts, spoon marinara sauce over each, then sprinkle with mozzarella cheese. Cook for an additional 5-7 minutes until cheese is bubbly.
  8. Remove from the air fryer, garnish with fresh basil, and serve.
