Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
- 1 cup (120 g) all-purpose flour
- 2 large eggs
- 1 cup (100 g) seasoned breadcrumbs (or panko for extra crunch)
- ½ cup (50 g) grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup (240 ml) marinara sauce
- 1 ½ cups (150 g) shredded mozzarella cheese (for topping)
- Fresh basil leaves (optional for garnish)
Instructions:
- Flatten chicken breasts to an even thickness (about ½ inch) and season with salt and pepper.
- In bowl 1, place the flour. In bowl 2, beat the eggs. In bowl 3, combine breadcrumbs, grated Parmesan, garlic powder, and dried basil.
- Dredge each chicken breast in flour, dip into the beaten eggs, and coat in breadcrumb mixture, pressing firmly to adhere.
- Place breaded chicken on a baking tray and refrigerate for 30 minutes.
- Preheat air fryer to 400°F (200°C) for about 5 minutes.
- Spray each chicken breast lightly with cooking spray. Arrange chicken in a single layer in the air fryer basket. Cook for 10 minutes.
- Flip chicken breasts, spoon marinara sauce over each, then sprinkle with mozzarella cheese. Cook for an additional 5-7 minutes until cheese is bubbly.
- Remove from the air fryer, garnish with fresh basil, and serve.
