Ingredients:
- 2 large (12-inch/30cm) flour tortillas
- 2 tablespoons vegetable oil
- 1 pound (450g) ground beef (at least 80% lean)
- 1 tablespoon vegetable oil
- 1 small yellow onion, finely chopped (about ½ cup)
- 2 cloves garlic, minced
- 1 packet (1 ounce/28g) taco seasoning (store-bought or homemade)
- ½ cup (120ml) water
- 1 (16 ounce/450g) can refried beans
- 1 tablespoon hot sauce (such as Tabasco or Cholula) (Optional)
- 1 cup (240ml) tomato sauce
- 1 teaspoon chili powder
- ½ teaspoon cumin
- Pinch of sugar
- 2 cups (225g) shredded cheddar cheese
- ½ cup (60g) shredded Monterey Jack cheese
- ½ cup (about 2) Roma tomatoes, diced
- ¼ cup (a small handful) green onions, thinly sliced
Instructions:
- Brush both sides of the tortillas with oil. Bake or pan-fry until golden brown and crispy, but not burnt. Set aside.
- Brown the ground beef in a skillet, breaking it up with a spoon. Drain off any excess grease.
- Add the chopped onion and garlic to the beef and sauté until softened. Stir in the taco seasoning and water. Simmer until thickened.
- Warm the refried beans (microwave or stovetop). Stir in hot sauce, if using.
- Combine tomato sauce, chili powder, cumin, and sugar in a small saucepan (or microwave-safe bowl). Simmer or microwave until heated through.
- Spread refried beans evenly over one crispy tortilla. Top with seasoned ground beef, then spread the tomato sauce over the beef. Sprinkle with cheddar and Monterey Jack cheese.
- Place the assembled pizza on a baking sheet and bake until the cheese is melted and bubbly.
- Top with diced tomatoes and green onions. Cut into wedges and serve immediately.
