Ingredients:

  • 12 ounces pasta (e.g., penne or fusilli)
  • 1 pint cherry tomatoes, halved
  • 1 block feta cheese, crumbled
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, crumbled feta cheese, minced garlic, olive oil, oregano, salt, and pepper.
  3. Roast in the oven for 20 minutes, or until the tomatoes burst and the feta is golden.
  4. While the mixture roasts, cook the pasta according to package instructions until al dente. Drain and set aside.
  5. Remove the baking dish from the oven and mix the roasted ingredients until well combined.
  6. Add the cooked pasta to the baking dish and toss to coat thoroughly with the sauce.
  7. Serve hot, garnished with fresh basil leaves.
