Ingredients:
- 12 ounces pasta (e.g., penne or fusilli)
- 1 pint cherry tomatoes, halved
- 1 block feta cheese, crumbled
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, crumbled feta cheese, minced garlic, olive oil, oregano, salt, and pepper.
- Roast in the oven for 20 minutes, or until the tomatoes burst and the feta is golden.
- While the mixture roasts, cook the pasta according to package instructions until al dente. Drain and set aside.
- Remove the baking dish from the oven and mix the roasted ingredients until well combined.
- Add the cooked pasta to the baking dish and toss to coat thoroughly with the sauce.
- Serve hot, garnished with fresh basil leaves.
