Ingredients:

  • 2 cups fresh spinach, chopped
  • 1 (14 oz) can of artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened
  • 1/2 cup Greek yogurt, plain
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional for heat)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a pan over medium heat, sauté chopped spinach until wilted, about 2-3 minutes. Remove from heat and let cool.
  3. In a mixing bowl, combine the softened cream cheese and Greek yogurt until smooth.
  4. Add in the mozzarella, Parmesan, garlic, salt, black pepper, and red pepper flakes.
  5. Fold in the sautéed spinach and chopped artichokes until well mixed.
  6. Transfer the mixture to a baking dish, smoothing it out evenly.
  7. Bake in the preheated oven for 20 minutes, or until bubbly and slightly golden on top.
  8. Serve warm with your choice of dippers like tortilla chips or veggie sticks.
