Ingredients:

  • 2 large English cucumbers (about 1.5 lbs/680g total), thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup (120ml) sour cream
  • 1/4 cup (60ml) mayonnaise (full-fat or light)
  • 2 tablespoons white vinegar (or apple cider vinegar)
  • 1 tablespoon granulated sugar
  • 1 teaspoon dried dill (or 1 tablespoon fresh, chopped dill)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Thinly slice the cucumbers and red onion. Place them in a large mixing bowl.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, vinegar, sugar, dill, salt, and pepper.
  3. Pour the dressing over the cucumbers and onion. Gently toss to ensure everything is evenly coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Stir before serving.
