Ingredients:

  • 2 cups sweet corn (fresh, frozen, or canned)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup diced red bell pepper
  • ¼ cup diced green onions (scallions)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Tortilla chips or fresh vegetable sticks for serving

Instructions:

  1. If serving warm, preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, sour cream, and spices. Mix until smooth and creamy.
  3. Fold in sweet corn, diced red bell pepper, shredded cheddar cheese, and green onions. Season with salt and pepper to taste.
  4. Spoon the mixture into a baking dish (if serving warm) or a serving bowl (if serving chilled).
  5. If baking, place in the preheated oven for 10-15 minutes until heated through and cheese is melted.
  6. If not baking, cover and refrigerate for at least 30 minutes before serving to enhance flavors.
  7. Serve warm with tortilla chips, or chilled with vegetable sticks.
