Ingredients:
- 2 cups sweet corn (fresh, frozen, or canned)
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup diced red bell pepper
- ¼ cup diced green onions (scallions)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Tortilla chips or fresh vegetable sticks for serving
Instructions:
- If serving warm, preheat oven to 350°F (175°C).
- In a large mixing bowl, combine softened cream cheese, sour cream, and spices. Mix until smooth and creamy.
- Fold in sweet corn, diced red bell pepper, shredded cheddar cheese, and green onions. Season with salt and pepper to taste.
- Spoon the mixture into a baking dish (if serving warm) or a serving bowl (if serving chilled).
- If baking, place in the preheated oven for 10-15 minutes until heated through and cheese is melted.
- If not baking, cover and refrigerate for at least 30 minutes before serving to enhance flavors.
- Serve warm with tortilla chips, or chilled with vegetable sticks.
