Ingredients:
- 2 tbsp extra virgin olive oil
- 1 medium (150g) yellow onion, diced
- 3 cloves (15g) garlic, minced
- 2 large (120g) carrots, sliced into rounds
- 2 stalks (60g) celery, diced
- 1 medium (150g) Yukon Gold potato, peeled and cubed
- 4 cups (950ml) low-sodium vegetable broth
- 1 can (400ml) full-fat coconut milk
- 2 cups (60g) fresh baby spinach, chopped
- 1 tsp (5g) dried thyme
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (6g) sea salt
- 1/2 tsp (3g) cracked black pepper
Instructions:
- Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; sauté for 6-8 minutes until onions are translucent and carrots soften.
- Stir in the minced garlic and dried thyme. Cook for 60 seconds until the aroma is pungent and fragrant.
- Add the cubed potatoes and 950ml vegetable broth. Bring the liquid to a gentle boil, then immediately reduce to a simmer.
- Cover with a lid and cook for 15-20 minutes until the potatoes are fork tender.
- Turn the heat to low. Stir in the 400ml coconut milk and chopped spinach, stirring until the greens have wilted.
- Use an immersion blender directly in the pot, processing until the soup is completely smooth.
- Stir in 1 tbsp lemon juice, sea salt, and cracked black pepper.
- Taste and adjust salt as needed before serving.
