Ingredients:

  • 12 oz Fresh or Frozen Cranberries
  • ⅔ cup Granulated Sugar
  • ½ cup Water
  • 1 tsp Orange Zest, finely grated
  • 2 tbsp Orange Juice, freshly squeezed
  • ⅛ tsp Salt (for relish)
  • 16 oz Full-Fat Cream Cheese, softened (2 blocks)
  • ¼ cup Light Brown Sugar, packed
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt (for cream cheese base)
  • ½ cup Pecans or Walnuts, chopped (optional garnish)

Instructions:

  1. Prepare the Relish: In a medium saucepan, combine the cranberries, granulated sugar, water, orange zest, orange juice, and the pinch of salt.
  2. Simmer: Bring the mixture to a rolling boil over medium-high heat, stirring until the sugar is dissolved. Reduce the heat to medium-low and simmer gently for 8 to 10 minutes. Stir occasionally. The berries will begin to burst and the sauce will visibly thicken.
  3. Cool: Remove the relish from the heat. Transfer it to a separate container and allow it to cool completely to room temperature. It must be cold before assembly.
  4. Prepare the Base: Ensure the cream cheese is fully softened. Place the cream cheese, brown sugar, vanilla extract, and salt into a mixing bowl.
  5. Whip: Using an electric mixer (or vigorous manual stirring), beat the ingredients until the mixture is completely smooth, creamy, and lump-free.
  6. Spread the Base: Transfer the cream cheese mixture onto your chosen serving platter or dish. Use a spatula to spread the mixture evenly, forming a layer about ¾-inch thick.
  7. Layer the Relish: Once the cranberry relish is thoroughly cooled and thick, spoon it carefully over the cream cheese base and gently spread the relish to cover the entire layer.
  8. Garnish: Sprinkle the chopped, lightly toasted nuts (pecans or walnuts) around the edges of the dip or across the surface.
  9. Chill: Cover the dish loosely and refrigerate for a minimum of 2 hours. This chilling time allows the base to firm up and the flavors to marry.
  10. Serve: Allow the dip to sit at room temperature for about 15 minutes before serving for optimal texture. Serve chilled with water crackers or toasted baguette slices.
