Ingredients:
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (240g) all-purpose flour
- 1 cup (95g) dried cranberries, chopped
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 oz (226g) cream cheese, softened
- 1/4 cup (60ml) heavy cream
- 3 cups (360g) powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup (50g) chopped white chocolate or white chocolate chips (optional for garnish)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease or line a 9x13 inch baking pan with parchment paper.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture until just combined.
- Fold in chopped cranberries.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely on a cooling rack.
- Meanwhile, prepare the frosting by beating cream cheese and heavy cream until smooth.
- Gradually add powdered sugar and vanilla extract; mix until creamy.
- Once the bars are cooled, spread the frosting evenly over the top.
- If desired, sprinkle with chopped white chocolate.
- Cut into bars and serve, or refrigerate for an hour to set the frosting.
