Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 cup (95g) dried cranberries, chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 oz (226g) cream cheese, softened
  • 1/4 cup (60ml) heavy cream
  • 3 cups (360g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) chopped white chocolate or white chocolate chips (optional for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease or line a 9x13 inch baking pan with parchment paper.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking powder, and salt.
  7. Gradually add dry ingredients to the wet mixture until just combined.
  8. Fold in chopped cranberries.
  9. Spread the batter evenly into the prepared baking pan.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow to cool completely on a cooling rack.
  12. Meanwhile, prepare the frosting by beating cream cheese and heavy cream until smooth.
  13. Gradually add powdered sugar and vanilla extract; mix until creamy.
  14. Once the bars are cooled, spread the frosting evenly over the top.
  15. If desired, sprinkle with chopped white chocolate.
  16. Cut into bars and serve, or refrigerate for an hour to set the frosting.
