Ingredients:
- 2 cups All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 0.5 tsp Sea Salt
- 1.5 tsp Ground Cinnamon
- 1 cup Unsalted Butter, softened
- 0.75 cup Dark Brown Sugar, packed
- 0.5 cup Granulated Sugar
- 2 Large Eggs
- 2 tsp Pure Vanilla Extract
- 2 cups Old-Fashioned Rolled Oats
- 1.5 cups Semi-Sweet Chocolate Chips
- 1 cup Unsweetened Shredded Coconut
- 1 cup Chopped Pecans
Instructions:
- Preheat your oven to 350°F and line two large baking sheets with parchment paper.
- Whisk the dry ingredients including 2 cups flour, baking powder, baking soda, salt, and 1.5 tsp cinnamon in a medium bowl.
- Cream the butter and sugars using your mixer on medium high speed for about 3 minutes until the mixture looks pale and fluffy.
- Add the eggs and vanilla one at a time, beating well after each addition.
- Incorporate the dry mixture slowly on low speed until just a few streaks of flour remain.
- Fold in the rolled oats using a spatula or the lowest setting on your mixer.
- Add the chocolate chips, coconut, and pecans and stir by hand until the ingredients are evenly distributed.
- Scoop the dough into 2 tablespoon sized balls and place them 2 inches apart on the prepared sheets.
- Bake for 12 minutes until the edges are golden and the centers look set but soft.
- Cool on the pan for 5 minutes until they are firm enough to move, then transfer to a wire rack.
