Ingredients:

  • 2 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 0.5 tsp Sea Salt
  • 1.5 tsp Ground Cinnamon
  • 1 cup Unsalted Butter, softened
  • 0.75 cup Dark Brown Sugar, packed
  • 0.5 cup Granulated Sugar
  • 2 Large Eggs
  • 2 tsp Pure Vanilla Extract
  • 2 cups Old-Fashioned Rolled Oats
  • 1.5 cups Semi-Sweet Chocolate Chips
  • 1 cup Unsweetened Shredded Coconut
  • 1 cup Chopped Pecans

Instructions:

  1. Preheat your oven to 350°F and line two large baking sheets with parchment paper.
  2. Whisk the dry ingredients including 2 cups flour, baking powder, baking soda, salt, and 1.5 tsp cinnamon in a medium bowl.
  3. Cream the butter and sugars using your mixer on medium high speed for about 3 minutes until the mixture looks pale and fluffy.
  4. Add the eggs and vanilla one at a time, beating well after each addition.
  5. Incorporate the dry mixture slowly on low speed until just a few streaks of flour remain.
  6. Fold in the rolled oats using a spatula or the lowest setting on your mixer.
  7. Add the chocolate chips, coconut, and pecans and stir by hand until the ingredients are evenly distributed.
  8. Scoop the dough into 2 tablespoon sized balls and place them 2 inches apart on the prepared sheets.
  9. Bake for 12 minutes until the edges are golden and the centers look set but soft.
  10. Cool on the pan for 5 minutes until they are firm enough to move, then transfer to a wire rack.
