Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) unsweetened applesauce
- 1/2 cup (120ml) whole milk
- 3 large eggs
- 1/2 cup (115g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 cups apples, peeled and diced (preferably Granny Smith or Honeycrisp)
- 1/4 cup (50g) brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup (120g) powdered sugar
- 2-3 tablespoons (30-45ml) milk or cream
- 1/2 teaspoon vanilla extract
Instructions:
- Prepare the apple filling: In a bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Set aside.
- Preheat the oven to 350°F (175°C).
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Combine wet ingredients: In a separate bowl, whisk together applesauce, milk, eggs, melted butter, and vanilla until well combined.
- Combine wet and dry: Pour wet ingredients into dry ingredients and mix until just combined; do not overmix.
- Layer ingredients: Pour half of the batter into the loaf pan, sprinkle half of the apple filling, pour remaining batter, and finish with remaining apple filling.
- Bake: Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted comes out clean.
- Prepare the glaze: While the bread cools, whisk together powdered sugar, milk, and vanilla until smooth.
- Glaze and serve: Once cool, drizzle glaze over the top and let it set before slicing.
