Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) whole milk
  • ¼ cup (60ml) ube puree (cooked and mashed ube)
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • Additional butter or oil for the pan

Instructions:

  1. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine milk, ube puree, egg, and melted butter. Whisk until smooth.
  3. Pour wet ingredients into the dry ingredients and mix until just combined; some lumps are okay.
  4. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour ¼ cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  7. Flip and cook for an additional 1-2 minutes until golden brown.
  8. Stack pancakes and serve immediately with toppings of your choice.
