Ingredients:
- 1 cup (120g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (240ml) whole milk
- ¼ cup (60ml) ube puree (cooked and mashed ube)
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- Additional butter or oil for the pan
Instructions:
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine milk, ube puree, egg, and melted butter. Whisk until smooth.
- Pour wet ingredients into the dry ingredients and mix until just combined; some lumps are okay.
- Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip and cook for an additional 1-2 minutes until golden brown.
- Stack pancakes and serve immediately with toppings of your choice.
