Ingredients:
- 2 cups grated ube (purple yam)
- 1 cup coconut milk
- 1 cup sweetened condensed milk
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- Peel and grate the ube (or use pre-grated ube).
- In a medium saucepan, combine grated ube, coconut milk, condensed milk, sugar, butter, vanilla, and salt.
- Over medium heat, stir the mixture continuously to prevent sticking and ensure even cooking. Cook until the mixture becomes thick and pulls away from the sides of the pan (about 30-40 minutes).
- Transfer the thickened mixture into the greased baking dish or mold, smoothing out the top.
- Allow the ube halaya to cool to room temperature, then refrigerate for about 15 minutes before slicing and serving.
