Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 ¼ cups (300ml) milk
- 1 large egg
- 3 tablespoons (42g) melted unsalted butter, cooled slightly
- 1 teaspoon vanilla extract
Instructions:
- Whisk together flour, baking powder, salt, and sugar in a large bowl.
- In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients. Stir just until combined. Lumps are okay!
- Heat a lightly oiled griddle or skillet over medium heat. A drop of water should sizzle and evaporate quickly.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to set.
- Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides and cooked through.
- Serve hot with your favorite toppings!
