Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 ¼ cups (300ml) milk
  • 1 large egg
  • 3 tablespoons (42g) melted unsalted butter, cooled slightly
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk together flour, baking powder, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Stir just until combined. Lumps are okay!
  4. Heat a lightly oiled griddle or skillet over medium heat. A drop of water should sizzle and evaporate quickly.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to set.
  7. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides and cooked through.
  8. Serve hot with your favorite toppings!
