Ingredients:
- 4 cups turkey drippings (600 ml)
- 1 cup low-sodium chicken or turkey broth (240 ml)
- ½ cup all-purpose flour (60 g)
- ½ cup unsalted butter (115 g)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme (1 g)
- 1 tsp dried sage (1 g)
- Salt and pepper to taste
Instructions:
- Collect turkey drippings from your roasting pan and let them sit for a few minutes. Skim off excess fat.
- In a heavy-bottomed saucepan over medium heat, melt the butter. Add chopped onions and garlic, sauté until softened and fragrant (about 5 minutes).
- Sprinkle flour over the onions, stirring constantly for 2-3 minutes until golden brown.
- Gradually whisk in turkey drippings and broth, ensuring there are no lumps.
- Stir in dried thyme, sage, and season with salt and pepper. Cook on low heat, whisking frequently.
- Allow gravy to simmer and thicken for about 10 minutes, until it reaches your desired consistency.
- For a smooth gravy, strain through a fine mesh strainer, pressing with the back of a ladle.
- Taste and adjust seasoning before serving warm.
