Ingredients:

  • 4 cups turkey drippings (600 ml)
  • 1 cup low-sodium chicken or turkey broth (240 ml)
  • ½ cup all-purpose flour (60 g)
  • ½ cup unsalted butter (115 g)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme (1 g)
  • 1 tsp dried sage (1 g)
  • Salt and pepper to taste

Instructions:

  1. Collect turkey drippings from your roasting pan and let them sit for a few minutes. Skim off excess fat.
  2. In a heavy-bottomed saucepan over medium heat, melt the butter. Add chopped onions and garlic, sauté until softened and fragrant (about 5 minutes).
  3. Sprinkle flour over the onions, stirring constantly for 2-3 minutes until golden brown.
  4. Gradually whisk in turkey drippings and broth, ensuring there are no lumps.
  5. Stir in dried thyme, sage, and season with salt and pepper. Cook on low heat, whisking frequently.
  6. Allow gravy to simmer and thicken for about 10 minutes, until it reaches your desired consistency.
  7. For a smooth gravy, strain through a fine mesh strainer, pressing with the back of a ladle.
  8. Taste and adjust seasoning before serving warm.
