Ingredients:
- 16 oz frozen petite peas
- 1 cup sharp cheddar cheese, cubed into 1/4 inch pieces
- 1/2 cup red onion, finely diced
- 6 strips thick-cut bacon, fried and crumbled
- 3 large hard-boiled eggs, peeled and chopped
- 1/2 cup high-quality mayonnaise
- 1/4 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- 1/2 tsp smoked paprika
- Salt to taste
- Freshly cracked black pepper to taste
Instructions:
- Place the frozen peas in a colander and run lukewarm water over them for 30 seconds. Pat the peas dry with a paper towel.
- Soak the finely diced red onions in a bowl of ice water for 10 minutes to remove the harsh bite. Drain and pat dry.
- In a small mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, granulated sugar, and smoked paprika until a smooth, stabilized emulsion forms.
- In a large mixing bowl, combine the dried peas, cubed cheddar cheese, soaked onions, crumbled bacon, and chopped hard-boiled eggs.
- Gently fold the dressing into the pea mixture using a silicone spatula to avoid crushing the eggs, until every ingredient is evenly coated.
- Season with salt and freshly cracked black pepper to taste. Serve immediately or chill for 1 hour to allow flavors to meld.
