Ingredients:

  • 1 cup mixed olives, pitted and roughly chopped
  • ½ cup green olives, pitted and roughly chopped
  • ¼ cup roasted red peppers, diced
  • 2 cloves garlic, minced
  • 1 tablespoon capers, rinsed and chopped
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 large round sesame seed loaf or focaccia
  • 8 slices mortadella
  • 8 slices salami
  • 8 slices provolone cheese
  • 8 slices ham
  • Additional olive salad for spreading

Instructions:

  1. In a mixing bowl, combine the mixed olives, green olives, roasted red peppers, garlic, and capers.
  2. Add the olive oil, red wine vinegar, oregano, salt, and pepper. Stir well to combine and let sit for 30 minutes to allow flavors to meld.
  3. Slice the loaf in half horizontally. Spread a generous layer of the olive salad on the bottom half of the loaf.
  4. Layer the mortadella, salami, ham, and provolone cheese evenly on top. Top with more olive salad if desired.
  5. Place the top half of the loaf on the sandwich.
  6. Wrap the entire sandwich tightly in plastic wrap. Place a heavy pan or weight on top for about 15 minutes to compress the sandwich.
  7. Remove the wrap, slice into wedges or quarters, and serve.
