Ingredients:
- 1 cup mixed olives, pitted and roughly chopped
- ½ cup green olives, pitted and roughly chopped
- ¼ cup roasted red peppers, diced
- 2 cloves garlic, minced
- 1 tablespoon capers, rinsed and chopped
- ¼ cup extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 large round sesame seed loaf or focaccia
- 8 slices mortadella
- 8 slices salami
- 8 slices provolone cheese
- 8 slices ham
- Additional olive salad for spreading
Instructions:
- In a mixing bowl, combine the mixed olives, green olives, roasted red peppers, garlic, and capers.
- Add the olive oil, red wine vinegar, oregano, salt, and pepper. Stir well to combine and let sit for 30 minutes to allow flavors to meld.
- Slice the loaf in half horizontally. Spread a generous layer of the olive salad on the bottom half of the loaf.
- Layer the mortadella, salami, ham, and provolone cheese evenly on top. Top with more olive salad if desired.
- Place the top half of the loaf on the sandwich.
- Wrap the entire sandwich tightly in plastic wrap. Place a heavy pan or weight on top for about 15 minutes to compress the sandwich.
- Remove the wrap, slice into wedges or quarters, and serve.
