Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- ½ teaspoon (2g) salt
- 3 tablespoons (42g) unsalted butter, softened
- 1 large egg
- 1 tablespoon (15ml) white wine or vinegar
- 1 ½ cups (340g) whole-milk ricotta cheese
- ¾ cup (90g) powdered sugar, sifted
- ½ teaspoon (2.5ml) vanilla extract
- ¼ cup (45g) mini chocolate chips (optional)
- 1 tablespoon (15ml) grated orange zest (optional)
- Vegetable oil (for frying)
Instructions:
- In a bowl, combine the flour, sugar, and salt.
- Add the softened butter, mixing until crumbly.
- Incorporate the egg and wine/vinegar until a dough forms.
- Knead until smooth, then cover and rest for 1 hour.
- Divide the dough into manageable pieces and roll out each piece until 1/16-inch thick.
- Cut into circles (about 4-5 inches in diameter).
- Heat oil in a pot to 350°F (175°C). Wrap each circle around a cannoli tube, sealing edges with water.
- Fry until golden brown, about 2-3 minutes; remove and drain on paper towels.
- In a bowl, mix ricotta, powdered sugar, and vanilla until smooth.
- Fold in chocolate chips and/or orange zest if using.
- Fill a pastry bag with the ricotta mixture and pipe the filling into each shell just before serving.
- Dust with extra powdered sugar before serving.
