Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • ½ teaspoon (2g) salt
  • 3 tablespoons (42g) unsalted butter, softened
  • 1 large egg
  • 1 tablespoon (15ml) white wine or vinegar
  • 1 ½ cups (340g) whole-milk ricotta cheese
  • ¾ cup (90g) powdered sugar, sifted
  • ½ teaspoon (2.5ml) vanilla extract
  • ¼ cup (45g) mini chocolate chips (optional)
  • 1 tablespoon (15ml) grated orange zest (optional)
  • Vegetable oil (for frying)

Instructions:

  1. In a bowl, combine the flour, sugar, and salt.
  2. Add the softened butter, mixing until crumbly.
  3. Incorporate the egg and wine/vinegar until a dough forms.
  4. Knead until smooth, then cover and rest for 1 hour.
  5. Divide the dough into manageable pieces and roll out each piece until 1/16-inch thick.
  6. Cut into circles (about 4-5 inches in diameter).
  7. Heat oil in a pot to 350°F (175°C). Wrap each circle around a cannoli tube, sealing edges with water.
  8. Fry until golden brown, about 2-3 minutes; remove and drain on paper towels.
  9. In a bowl, mix ricotta, powdered sugar, and vanilla until smooth.
  10. Fold in chocolate chips and/or orange zest if using.
  11. Fill a pastry bag with the ricotta mixture and pipe the filling into each shell just before serving.
  12. Dust with extra powdered sugar before serving.
