Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (3g) salt
  • 1 cup (226g) unsalted butter
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 cup (240ml) Classic Coca-Cola
  • 1/2 cup (120ml) buttermilk
  • 2 large eggs, room temperature
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (113g) unsalted butter (for glaze)
  • 1/4 cup (25g) unsweetened cocoa powder (for glaze)
  • 6 tablespoons (90ml) Classic Coca-Cola (for glaze)
  • 3 cups (375g) confectioners' sugar, sifted
  • 1 teaspoon (5ml) vanilla extract (for glaze)
  • 1 cup (110g) chopped pecans

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, and salt.
  3. In a medium saucepan over medium heat, combine 1 cup butter, 1/4 cup cocoa powder, and 1 cup Coca-Cola. Bring to a rolling boil while whisking until smooth.
  4. Pour the hot cola mixture over the dry ingredients and whisk until just combined.
  5. Whisk in the buttermilk, eggs, and vanilla extract until the batter is smooth.
  6. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Prepare the glaze 5 minutes before the cake finishes baking: boil 1/2 cup butter, 1/4 cup cocoa, and 6 tablespoons Coca-Cola in a saucepan. Remove from heat and whisk in powdered sugar, vanilla, and pecans.
  8. Pour the warm glaze over the cake immediately after removing it from the oven while the cake is still hot.
