Ingredients:
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) salt
- 1 cup (226g) unsalted butter
- 1/4 cup (25g) unsweetened cocoa powder
- 1 cup (240ml) Classic Coca-Cola
- 1/2 cup (120ml) buttermilk
- 2 large eggs, room temperature
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (113g) unsalted butter (for glaze)
- 1/4 cup (25g) unsweetened cocoa powder (for glaze)
- 6 tablespoons (90ml) Classic Coca-Cola (for glaze)
- 3 cups (375g) confectioners' sugar, sifted
- 1 teaspoon (5ml) vanilla extract (for glaze)
- 1 cup (110g) chopped pecans
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, and salt.
- In a medium saucepan over medium heat, combine 1 cup butter, 1/4 cup cocoa powder, and 1 cup Coca-Cola. Bring to a rolling boil while whisking until smooth.
- Pour the hot cola mixture over the dry ingredients and whisk until just combined.
- Whisk in the buttermilk, eggs, and vanilla extract until the batter is smooth.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the glaze 5 minutes before the cake finishes baking: boil 1/2 cup butter, 1/4 cup cocoa, and 6 tablespoons Coca-Cola in a saucepan. Remove from heat and whisk in powdered sugar, vanilla, and pecans.
- Pour the warm glaze over the cake immediately after removing it from the oven while the cake is still hot.
