Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • Water, for boiling chicken
  • 1/2 cup (120ml) mayonnaise, full-fat preferred
  • 1/4 cup (30g) celery, finely diced
  • 1/4 cup (30g) red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of celery seed (optional)

Instructions:

  1. Gently poach chicken breasts in simmering water until cooked through. Check for doneness.
  2. Allow chicken to cool slightly, then shred into bite-sized pieces.
  3. Dice celery and red onion into small, even pieces. Chop parsley.
  4. In a mixing bowl, combine shredded chicken, mayonnaise, celery, red onion, parsley, lemon juice, salt, and pepper.
  5. Stir gently until all ingredients are evenly distributed.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve chilled on bread, crackers, lettuce cups, or on its own.
