Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts
- Water, for boiling chicken
- 1/2 cup (120ml) mayonnaise, full-fat preferred
- 1/4 cup (30g) celery, finely diced
- 1/4 cup (30g) red onion, finely diced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of celery seed (optional)
Instructions:
- Gently poach chicken breasts in simmering water until cooked through. Check for doneness.
- Allow chicken to cool slightly, then shred into bite-sized pieces.
- Dice celery and red onion into small, even pieces. Chop parsley.
- In a mixing bowl, combine shredded chicken, mayonnaise, celery, red onion, parsley, lemon juice, salt, and pepper.
- Stir gently until all ingredients are evenly distributed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled on bread, crackers, lettuce cups, or on its own.
