Ingredients:
- 1 pound (450g) ripe tomatoes, such as Roma or heirloom, sliced about ¼ inch thick
- 8 ounces (225g) fresh mozzarella cheese, preferably buffalo mozzarella (bocconcini or a larger ball, sliced to match tomato thickness)
- 1/2 cup (approx. 1 large bunch) fresh basil leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar or balsamic glaze
- Salt and freshly ground black pepper, to taste
Instructions:
- Wash and slice tomatoes into ¼-inch thick slices.
- Slice the mozzarella into slices approximately the same thickness as the tomatoes.
- Arrange tomato slices, mozzarella slices, and basil leaves in an alternating pattern on a serving platter or individual plates.
- Drizzle olive oil and balsamic vinegar or glaze over the salad.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately for the best flavor and texture.
