Ingredients:

  • 1 pound (450g) ripe tomatoes, such as Roma or heirloom, sliced about ¼ inch thick
  • 8 ounces (225g) fresh mozzarella cheese, preferably buffalo mozzarella (bocconcini or a larger ball, sliced to match tomato thickness)
  • 1/2 cup (approx. 1 large bunch) fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Wash and slice tomatoes into ¼-inch thick slices.
  2. Slice the mozzarella into slices approximately the same thickness as the tomatoes.
  3. Arrange tomato slices, mozzarella slices, and basil leaves in an alternating pattern on a serving platter or individual plates.
  4. Drizzle olive oil and balsamic vinegar or glaze over the salad.
  5. Season with salt and freshly ground black pepper to taste.
  6. Serve immediately for the best flavor and texture.
