Ingredients:
- 3 large ripe bananas (about 300g)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups (190g) all-purpose flour
- Optional: 1/2 cup (75g) chopped walnuts or pecans
- Optional: 1/2 cup (90g) chocolate chips
- Optional: 1 teaspoon ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Check that your oven rack is in the centre position.
- In a bowl, use a fork to mash the ripe bananas until smooth.
- Stir in the melted butter, then mix in the sugar, beaten egg, and vanilla extract.
- In a separate bowl, whisk together the baking soda, salt, and flour.
- Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix.
- If using, fold in nuts, chocolate chips, or cinnamon.
- Smooth the top with a spatula after pouring into the prepared loaf pan.
- Place in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
