Ingredients:

  • 3 large ripe bananas (about 300g)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • Optional: 1/2 cup (75g) chopped walnuts or pecans
  • Optional: 1/2 cup (90g) chocolate chips
  • Optional: 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Check that your oven rack is in the centre position.
  2. In a bowl, use a fork to mash the ripe bananas until smooth.
  3. Stir in the melted butter, then mix in the sugar, beaten egg, and vanilla extract.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix.
  6. If using, fold in nuts, chocolate chips, or cinnamon.
  7. Smooth the top with a spatula after pouring into the prepared loaf pan.
  8. Place in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the centre comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
