Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- ½ tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- 3 large (150g) overripe bananas, mashed
- ½ cup (115g) unsalted butter, melted and slightly cooled
- ¾ cup (150g) brown sugar, packed
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- ¾ cup (100g) chopped walnuts or pecans
- 1 tbsp (8g) granulated sugar
- ½ tsp (2g) extra cinnamon
Instructions:
- Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until no clumps remain.
- In a large bowl, mash the bananas until smooth. Stir in the melted butter and brown sugar until combined.
- Beat the egg and vanilla extract into the banana mixture until glossy and uniform.
- Gently fold the dry ingredients into the wet mixture using a rubber spatula, stopping as soon as no streaks of flour remain.
- Stir in the chopped walnuts or pecans.
- Divide the batter evenly among the muffin liners. Sprinkle the tops with granulated sugar and extra cinnamon.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Transfer to a wire cooling rack.
