Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3 medium overripe bananas, mashed
- 1 cup grated zucchini, squeezed dry
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/4 cup chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- Grate the zucchini and place it in a clean kitchen towel; squeeze firmly to remove excess water.
- Mash the bananas in a medium bowl until smooth with minimal lumps.
- In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla, whisking until pale and creamy.
- Stir the mashed bananas and squeezed zucchini into the wet mixture.
- In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain; do not overmix.
- Fold in the chocolate chips and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
