Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 medium overripe bananas, mashed
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. Grate the zucchini and place it in a clean kitchen towel; squeeze firmly to remove excess water.
  3. Mash the bananas in a medium bowl until smooth with minimal lumps.
  4. In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla, whisking until pale and creamy.
  5. Stir the mashed bananas and squeezed zucchini into the wet mixture.
  6. In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
  7. Gently fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain; do not overmix.
  8. Fold in the chocolate chips and chopped walnuts.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
