Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 (3.4 oz) package vanilla instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C).
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, use a mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the vanilla pudding mix until combined, then add the eggs one at a time, followed by the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chocolate chips with a rubber spatula.
- Cover the dough and chill in the fridge for 30 minutes to firm up.
- Scoop tablespoons of dough onto a prepared baking sheet and bake for 10-12 minutes, or until golden brown on the edges.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
