Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 (3.4 oz) package vanilla instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use a mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the vanilla pudding mix until combined, then add the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chocolate chips with a rubber spatula.
  7. Cover the dough and chill in the fridge for 30 minutes to firm up.
  8. Scoop tablespoons of dough onto a prepared baking sheet and bake for 10-12 minutes, or until golden brown on the edges.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
