Ingredients:
- 1 lb (450g) fresh white fish fillets (e.g., cod, halibut, or snapper)
- 1 cup (240ml) freshly squeezed citrus juice (e.g., lemon, lime, & orange mix)
- 1 tablespoon (15ml) olive oil
- 1 teaspoon (5g) sea salt
- ½ teaspoon (2g) freshly cracked black pepper
- 2 tablespoons (30g) fresh herbs (e.g., dill, parsley, or cilantro), chopped
- Crushed ice (enough to fill the serving platter)
- Fresh citrus slices for garnish (e.g., lemon wheels, lime wedges)
- Microgreens or edible flowers for garnish (optional)
Instructions:
- Rinse the fish fillets under cold water and pat dry with paper towels. Cut the fish into bite-sized pieces or leave whole if preferred.
- In a large bowl, combine citrus juice, olive oil, salt, pepper, and chopped herbs.
- Add the fish pieces to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
- While the fish marinates, fill a serving platter or ice tray with crushed ice.
- Arrange the marinated fish on top of the ice after marination. Garnish with fresh citrus slices and microgreens, if desired.
