Ingredients:

  • 1 lb (450g) fresh white fish fillets (e.g., cod, halibut, or snapper)
  • 1 cup (240ml) freshly squeezed citrus juice (e.g., lemon, lime, & orange mix)
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon (5g) sea salt
  • ½ teaspoon (2g) freshly cracked black pepper
  • 2 tablespoons (30g) fresh herbs (e.g., dill, parsley, or cilantro), chopped
  • Crushed ice (enough to fill the serving platter)
  • Fresh citrus slices for garnish (e.g., lemon wheels, lime wedges)
  • Microgreens or edible flowers for garnish (optional)

Instructions:

  1. Rinse the fish fillets under cold water and pat dry with paper towels. Cut the fish into bite-sized pieces or leave whole if preferred.
  2. In a large bowl, combine citrus juice, olive oil, salt, pepper, and chopped herbs.
  3. Add the fish pieces to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
  4. While the fish marinates, fill a serving platter or ice tray with crushed ice.
  5. Arrange the marinated fish on top of the ice after marination. Garnish with fresh citrus slices and microgreens, if desired.
