Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon vanilla bean paste (optional)

Instructions:

  1. In a mixing bowl, combine heavy cream, whole milk, granulated sugar, vanilla extract, and vanilla bean paste. Whisk until the sugar dissolves.
  2. Put on safety goggles and gloves to handle liquid nitrogen safely. Place the ice cream base mixture into a stand mixer bowl or a large bowl.
  3. Slowly pour liquid nitrogen into the bowl while whisking continuously until the mixture thickens and freezes.
  4. Continue adding liquid nitrogen until the ice cream reaches a creamy texture, approximately 2 minutes, scraping sides as needed.
  5. Use an ice cream scoop to serve the freshly made ice cream and add optional toppings if desired.
