Ingredients:

  • 1 medium head of cauliflower, cut into florets (about 4 cups)
  • 1 cup shredded mozzarella cheese (100g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Steam or boil the cauliflower florets until tender (about 5-7 minutes). Drain well.
  3. In a mixing bowl, mash the cauliflower with a fork or potato masher until smooth.
  4. Add mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper to the mashed cauliflower; mix until combined.
  5. Using your hands, form small bite-sized balls or patties with the mixture and place them evenly on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway for even cooking.
  7. Serve warm, garnished with parsley, if desired.
