Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 6 medium flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • Sliced jalapeños (optional)
  • Chopped cilantro (optional)
  • Avocado slices (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until cooked through, about 5-7 minutes, then drain excess fat.
  3. Add black beans, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well and cook for another 5 minutes.
  4. Spread a thin layer of sour cream on the bottom of a greased baking dish.
  5. Place a tortilla in the dish, spoon a portion of the meat mixture, and sprinkle with cheese. Repeat layering until all ingredients are used.
  6. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until golden.
  7. Let cool for a few minutes before slicing. Serve with optional garnishes like jalapeños, cilantro, or avocado.
