Ingredients:
- 1 lb ground beef (or turkey)
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- Salt and pepper to taste
- 6 medium flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- Sliced jalapeños (optional)
- Chopped cilantro (optional)
- Avocado slices (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until cooked through, about 5-7 minutes, then drain excess fat.
- Add black beans, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well and cook for another 5 minutes.
- Spread a thin layer of sour cream on the bottom of a greased baking dish.
- Place a tortilla in the dish, spoon a portion of the meat mixture, and sprinkle with cheese. Repeat layering until all ingredients are used.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until golden.
- Let cool for a few minutes before slicing. Serve with optional garnishes like jalapeños, cilantro, or avocado.
