Ingredients:
- 1 medium head (approx. 2 lbs / 900g) cauliflower, cut into bite-sized florets
- 3 tbsp (45ml) extra-virgin olive oil
- 1 tsp (2g) ground cumin
- 1 tsp (2g) smoked paprika
- 3/4 tsp (4g) kosher salt
- 1/2 tsp (1g) cracked black pepper
- 1/2 cup (120g) plain Greek yogurt
- 2 tbsp (30ml) tahini
- 1 tbsp (15ml) fresh lemon juice
- 1 clove (3g) garlic, finely grated or minced
- 1 tbsp (15ml) water
- 1/4 tsp (1g) salt
- 1/4 cup (35g) pomegranate seeds
- 1/4 cup (10g) fresh flat-leaf parsley, chopped
- 1 tbsp (15ml) pomegranate molasses
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cauliflower florets with olive oil, ground cumin, smoked paprika, kosher salt, and cracked black pepper until evenly coated. Note: Make sure every nook is covered to prevent dry spots.
- Spread the florets in a single layer on the prepared baking sheet. Ensure they are not crowded so they roast instead of steaming.
- Roast for 20–25 minutes, tossing halfway through, until the edges are deeply browned and the stems are tender.
- While cauliflower roasts, combine Greek yogurt, tahini, lemon juice, grated garlic, and salt in a small bowl.
- Whisk the dressing vigorously, adding water one teaspoon at a time until it reaches a smooth, pourable consistency.
- Transfer the roasted cauliflower to a serving platter.
- Drizzle with the tahini yogurt dressing and garnish with pomegranate seeds and chopped parsley.
- Finish the dish with a light drizzle of pomegranate molasses for added acidity and sweetness.
